The scombroid toxin is highly heat-stable. Cooking, canning, or freezing cannot reduce the toxicity of the fish products. Symptom severity depends on the amount of toxin ingested. WebScombroid (histamine) food poisoning is caused by eating finfish that carry scombrotoxin (histamine) and has been the cause of food poisoning outbreaks. This toxin is produced by naturally occurring bacteria which convert the naturally occurring amino acid histidine in fish proteins to histamine.
